When I started as a head chef at the Crooklands hotel in August 2010 I knew I was coming into a very well set up sucessful kitchen. Me and Charles Horrax both shared in the same vision, to make great food that would create an explosion of tastes using traceable, locally sourced excellent quality produce.
Plumgarths is now our main meat supplier, they take a great deal of pride in sourcing high quality and ethically rearedmeat. I enjoy a great personal relationship with plumgarths which enables me to create seasonal specials using their finest meats.
JMP of sedberg deliver all our dry goods, they have great green polices which help to reduce emmissions of carbon dioxide through combining deliveries and route planning.
Class One of Skipton are our new fruit and vegetable suppliers, their quality is second to none, the seasonal fruits are great for specials.
C and G Neves of Fleetwood are leading the way in keeping a sustainable fish stock for the future.
We also use Furness Fish and Game for all our smoked fish and Morecambe Bay Potted Shrimps are the most popular locally used dish on the menu. Not forgetting the most important, very expensive but the best ice cream in the UK of course its English Lakes, they use the finest local ingredients.
